1. When we consider the topographic map of the area, it is very defensible from West to East and East to West (proven by the current siege of the city). Any attack into Donestk need to go through it so they need to keep that gate open.
2. With the number of Ukrainian losses in the city, it is critical that they hold on the city in order to prevent the true number of their losses a secret. The capture of the city risk exposing the very demoralising fact that they have been using conscripts as cannon fodder in a so-called "not important" city. I mean, at 800 per day, it is illogical for the Ukrainian to use their core forces to defend the city, which mean it is mostly defended by PMCs and conscripts.
3. With the coming of winter, logistics will be more difficult, more so when they can't rely on the rail network due to Russian strike on their electrical infrastructure. This mean they need to prevent any expansion (lengthening?) of the frontline because the longer it get, the worst their logistics problem will be. They already have problem when they try to attack Kherson and Kharkiv in the previous counteroffensive. Without Bakhmut as the great fortress in the east, they might not be able to survive another siege of Kiev, more so since the Pinsk Marshes which form almost the entirety of the southern border of Belarus will be frozen, making the possibility of a siege on Kiev even greater.
